@Albzi the reason some orthographies use accents is because they need to distinguish between sounds or uses, or sometimes meanings. There are certainly cases where accents do not matter for pronounciation, but umlauts speficially do indicate a significant sound change of a particular kind (but you are probably using the term approximatively - Ö in Österrech is not an umlaut, linguistically, for example)
(though the sound it represents is generally speaking similar to the same sound when it was produced by a proper umlaut; either way, clearly distinct from O)
if the accent didn't matter, it would not be used - cf Occam's razor

but the German umlauts definitely sound quite different to an English speaker than their ablaut counterparts
