Because the list is pretty long with how many sites we have, and part of the fun is getting the users to find the thing they want rather than just letting them browse through a long list and pick something out.
The contest is inspired by a few users I've talked to who have expressed interest in wanting specific things, whereas we frequently have contests which just give away SO shirts and stickers.

I mean, say I want a t-shirt. But there's actually something that you guys have that I want... but I don't know what it is.
 
You can actually find most of the site-specific swag items by just looking for the "top user swag" posts on their Meta sites.
